I am obsessed with my food these days. I have a desire to increase my mindfulness when eating. I was inspired by a spotlighted community called "ofmornings" Breakfast beautifully photographed. I would often just sit down with a bowl of soup with a slice of bread and wearily call it good. Since I took that health risk assessment, I have tried to include all the heart healthy recommendations like nuts, grains, dairy, fruits and veggies. I was more mindful of that when the kids were little. Then as they grew, it became more about quantity. The boys were huge eaters. This soup is not low cal:) It is a treat. It's all about balance, right?




This is a modified Taste of Home recipe for baked potato soup:
I halved it and it made allot!
I am going to freeze some for future weeknight dinners

1/3 cup butter
1/3 cup all-purpose flour
4 cups milk
3 large baking potatoes, baked, cooled, peeled and cubed
1/2 large sweet onion diced
6 bacon strips, cooked and crumbled
1 cup shredded cheddar cheese
1 cup (8 ounces) sour cream
3/4 tsp. salt
1/2 tsp. pepper


In a medium to large soup kettle, melt the butter. Stir in flour; heat and stir until smooth. Gradually add milk, stirring constantly until thickened. Add potatoes and onions. Bring to a boil, stirring constantly. Reduce heat; simmer for 10 minutes. Add remaining ingredients; stir until cheese is melted. Serve immediately. Yields: about 4 large servings.

*I browned the onions in a bit of the bacon grease*

It is even better the second day as all of the flavors have melded together better.

I served it with my homemade chardonnay, strawberries, orange segments, macadamia nuts and croissant



Were following that up with the rest of Traffic. We started watching it last night and both got too tired so were finishing it tonight.
